TO explain why the keto diet is so great for health, it's important to give a bit of an explanation on how your body works when it's burning carbs as its primary fuel source.

Carbohydrates from any source - fruits, vegetables, grains, sugars, anything starchy - are broken down into glucose, which is used for energy. When you eat more glucose than you can immediately use, your body stores the excess in the liver and muscles. When those stores get full, the body converts the excess glucose to fat for longer term storage.

Glucose is the first place the body goes for energy, but because we can only store limited amounts of glucose, its not a sustainable source of energy. This means we have to replenish our stores by eating constantly throughout the day.

This brings us to a little note about insulin. Insulin is the hormone that balances the blood sugar; it triggers the absorption of glucose from the blood, turns off fat burning in favor of burning glucose, and communicates with the brain when we're in need of more!

When insulin sensitivity is good, all of these systems work well but problems arise when there are constant high levels of glucose, insulin sensitivity decreases and we wind up with higher and higher levels of blood sugar (pre-diabetic).

How is ketosis better?

Once you're in nutritional ketosis and burning fat as your primary fuel, blood sugar and insulin levels drop and levels of HDL (good cholesterol) increase. Your body starts to burn its stored fat along with dietary fat, which means that you start to lose weight - and, even better for your health, the visceral fat around your organs, which is linked to increased risk of heart disease and type 2 diabetes shrinks.

Insulin is much more stable so it's not constantly alerting your brain that you need to eat because the fuel you need is available right in your body and appetite starts to naturally reduce. The chief benefits reported are:
